OIL-FREE & SUGAR-FREE EUROPEAN BREAD RECIPE
European bread is featuring a harder crunchy crust and chewy interior marked by irregular holes which is totally different from soft toast but it is loved by many people. The sugar content in European bread is relatively low, many are low oil or even oil-free to build healthy eating habits.
A few easy steps to make European bread at home by using purple sweet potato and black sesame, are a perfect accompaniment to any meal.
Oil-free & sugar-free purple potato with black sesame European Bread Recipe

Main Ingredient
Poolish 100g
Bread Flour 185g
Whole wheat flour 15g
Water 110g
Purple Potato Puree 87g
Black sesame 30g
Others
Yeast powder 1g
Salt 5g
Methods
2. Steam the purple sweet potato, then use a spoon to mash it and weigh out the required grams.
3. Prepare Poolish one night in advance: 50g of bread flour, 50g of water and 1g of yeast powder are mixed together and then ferment overnight in the refrigerator.
4. Put all the ingredients into electrical mixer according to the principle of placing liquid first, then powder, salt and yeast powder and start the kneading process.
5. Knead all the ingredients into a ball for a few minutes and let it stand to ferment.
6. Dip the fermented dough with your fingers and poke a hole in the middle, if it does not spring back, that means the first fermentation is completed.
7. Apply an appropriate amount of dry powder on the inner wall of the bowl. Place the dough to the bowl for secondary fermentation, no need to exhaust the air.
8. The dough rises to double its size.
9.Finally, preheat the oven in advance then sprays some water on the inner wall of the oven. Bake the bread for 35 minutes at 190 °C.
Tips
There is no need to knead out the glove film and no need to exhaust after the first fermentation, because the characteristic of the European bread is getting the honeycomb-shaped holes and the bigger the holes are better, suitable for beginner bakers. The water absorption of flour may vary, adjust the amount of water according to the dough. During the baking process, observe the color of bread and set the corresponding time and temperature according to your oven.
