RED BEAN SNOW SKIN MOONCAKE
Snow skin mooncakes are not only look great but also taste delicious, become so popular in Asia. Snow skin mooncake is much simpler than regular mooncakes and does not require an oven. This recipe is very suitable for beginner to make it at home during this year of Mid-Autumn Festival!
Ingredients:
50g Glutinous Rice Flour
50g Sticky Rice Flour
25g Wheat Starch
2g Cocoa Powder
2g Matcha Powder
200g Red Bean Paste
25g Corn Oil
30g White Sugar
30g Condensed Milk
200g of Pure Milk
Methods:
1) Firstly, sift the glutinous rice flour, sticky rice flour and wheat starch.
2) Secondly, mix the pure milk, white sugar, condensed milk and corn oil evenly.
3) Add the mixture in step 1 into the mixture in step 2.
4) Filter the mixture and leave it for half an hour.
5) Cover the mixture with plastic wrap and steam for about 30 minutes.
6) After steaming, stir the dough with chopsticks to cool down.
7) Put the dough in the bread machine and knead for 15 minutes (or wrap it in plastic wrap and knead the dough by hand).
8) After kneading, wrap the dough in plastic wrap and chill it in the refrigerator for at least 2 hours.
9) Separate the dough into two and then add in cocoa powder and matcha powder respectively, wrap them in plastic wrap and knead well for later use.
10) Sprinkle some cooked glutinous rice flour on the mold, then take a small piece of matcha dough and press it into a thin slice.
11) Install the pattern plate back into the mooncake mold.
12) For 50g mooncake mold, prepare 1:1 ratio of 25g of dough and 25g red bean paste and shape them into balls.
13) Dust the balls with a thin layer of cooked glutinous flour. Fit the balls into the mooncake mold and mold all the mooncakes.
Tips
1) If there is too much powder in the finished product, you can gently brush it off with a clean brush.
2) Transfer the mooncakes into an airtight container and store them in the fridge. It is best to finish within one or two days. Otherwise, they will become dry and hard in texture.
